In the hills of the Murgia dei Trulli, in Montalbano di Fasano, a caffetteria (café) founded in 1962 holds two distinct souls: the daily ritual of coffee and the art of panzerotti pugliesi (Apulian fried stuffed dough pockets), prepared live before the eyes of those waiting for them.
On Via Calatafimi, in the hillside heart of Montalbano di Fasano, a threshold open for more than sixty years tells the story of a gastronomic landmark that has never stopped being one. Since 1962 this place has been the town's point of reference for the daily coffee ritual and for the most authentic tradition of Apulian rosticceria (savoury fried and baked specialities).
The counter is the heart of the scene: the espresso machine always on, the pastry display in plain view, warm light filtering in from the street. Here unfolds the ritual of breakfast and of the Brindisi-style aperitivo, with the house cordiale and the panzerotto-dough sweets — some filled with nutella — rounding out an offer designed to run from morning until late at night.
The place's true signature is revealed in the live preparation: the dough worked before the customer's eyes, the filling chosen from the many varieties available — from nduja to the classic savoury fillings — and the frying carried out with such care that the panzerotto comes out dry, free of excess oil, crisp and light to the bite.
