Among the hills of Alta Umbria, in the small hamlet of Calzolaro where the province of Perugia opens onto the Tuscan Valtiberina, a family-run trattoria has spent over a decade safeguarding the flavours of a home-style cooking that has never stopped being genuinely authentic.
It was on 15 March 2015 that Marco Caproni and his wife Irina decided to transform a historic gathering place of the village into a trattoria capable of making every guest feel at home. Eleven years on, Volpelli has become a recognised point of reference in Umbria and the Tuscan Valtiberina, built on a simple idea: to cook well with what the land provides.
The dining room welcomes guests with the atmosphere of people who know their craft: local cured meats and cheeses arrive at the table as antipasto, and every dish is met by a wine list carefully chosen to pair with the sweet flavours and intense aromas of Umbrian cooking. On Fridays, in a different register, a fish menu also appears — available by request on other days of the week too.
Every day the kitchen sends out tagliatelle, pappardelle, gnocchi, agnolotti and cappelletti in broth, all handmade, dressed with sauces that speak of woodland and countryside: goose, wild boar, norcina and porcini mushroom ragù. Among the main courses, the roasts — scottadito lamb, mixed grilled pork, veal steak — bring to the table the oldest and most recognisable register of Umbrian cooking.
