ristorazione — Vieste · Puglia
On the Gargano promontory, where the medieval old town of Vieste huddles within its ancient walls, one restaurant has chosen to tell the story of its territory from piazza del fosso, with the sea already sensed from the entrance.
Vieste guards its medieval old town within walls that drop sheer to the sea. Tirovino occupies a precise corner of this stone labyrinth: piazza Vittorio Emanuele II, known to locals as piazza del fosso (the moat square), along the ancient walls dividing the borgo (old town) from the Adriatic. An address that is, in itself, already a statement of intent.
The cross vaults covering the dining room speak of centuries before the menu even arrives. Beneath that living stone, Tirovino has built a place that looks out to sea from the rotonda of Marina Piccola, with the lighthouse in the distance. The small balcony overlooking the water — mentioned by guests as the real discovery of the evening — completes a setting few pizzerias anywhere could claim.
The kitchen works with oils from the Gargano: coratina, ogliarola garganica and Itrana, cultivars that mark doughs and dressings with precise, recognisable character. Alongside the pizza — light dough, selected ingredients — there is room for paposcia garganica, a local specialty offered in variants named after the territory itself: San Lorenzo, Marina Piccola, Trabucco. Not folklore, but edible geography.
A carefully curated wine list — Apulian labels, whites, rosés and champagne — awaits those who wish to linger past sunset. The page tells the rest.
