ristorazione — Carcassonne · Occitanie
In the medieval heart of Carcassonne, just steps from the Halles Prosper Montagné, Sapori brings to France the family cooking of an Abruzzese chef: seventeen years in the trade, a stone-vaulted dining room, and a table that changes with the seasons.
The restaurant opened on 8 December 2025 at 55 rue Aimé-Ramond, in the city centre, facing the Halles. Patrizio Costantino, originally from Abruzzo, runs the kitchen with his wife Noria: a name born from seventeen years spent between Italy, Scotland and Luxembourg, and from a knowledge handed down from his grandmother.
Beneath the stone vaults of the basement dining room, the light turns intimate and the mood convivial. The menu offers starters, meats, risottos and pastas, with a card that evolves according to seasonal arrivals and ingredients chosen one at a time: no fixed dish that resists time, but a living cuisine that follows the market.
Every day the fresh pasta is handmade following traditional recipes. Patrizio's signature dish is the gnocchi maison with tomato and basil; alongside it, risottos and first courses that come out of the kitchen just as his grandmother made them in Abruzzo. The Italian épicerie fine and the tasting evenings round out an offer that brings Carcassonne to Italy, one dish at a time.
