In the Aeolian Islands, where the sea wind meets the volcanic earth of Salina, Azienda Agricola Roberto Rossello has for generations tended the caper plantations of Pollara — recognised as a Slow Food Presidium (Presidio Slow Food, a project protecting traditional foods at risk of disappearing) — within the boundaries of a nature reserve that preserves their authentic, unrepeatable character.
In Pollara the caper plants are propagated by cutting, a now-rare method that Azienda Agricola Roberto Rossello upholds with generational rigour. The plantations spread across the nature reserve of the island of Salina, where volcanic soil and Mediterranean light shape the character of every bud, picked by hand before it opens and before the sun can alter its scent.
Alongside capers and cucunci (caper berries), the season also brings citrus fruit, chilli peppers and other fruits of the island of Salina into the workshop: from these come orange, lemon and mandarin preserves, candied capers and jams that make up the sweet line of the business, made for anyone wishing to rediscover the island's character in an unexpected, gentle form.
On the workbenches, the capers rest under layers of Salina salt: small or large, they follow the pace of the artisan tradition that Maurizia De Lorenzo carries forward from generation to generation. Packed in salt, in vinegar or dressed, each format answers a precise use in the kitchen. It is this care — certified by the Slow Food Presidium recognition — that makes the caper of Pollara a product impossible to reproduce elsewhere.
