ristorazione — Pavia · Lombardia
In the historic center of Pavia, just steps from the Duomo, an unexpected passage opens toward Cilento: fresh fish, some of it raw, and gourmet Neapolitan pizzas carry the flavors of a distant sea into Lombardy. An address worth discovering, where history meets cooking rooted in place.
Via Teodolinda 38: the address sits in the medieval heart of Pavia, behind the Duomo and Piazza Vittoria. Palinuro takes its name from a headland in Cilento, and from the threshold it already declares its origin: this is not a restaurant of Lombard cuisine, but a piece of the Campania coast transplanted into Italy's oldest university city.
The dining room welcomes guests with service that reviews describe as young and warm: staff who know their craft, equally at ease putting at ease those who come for a pizza and those who choose the fish menu. In summer, the small outdoor patio — a dehors in the historic center — stretches the evening outside, just steps from Pavia's arcades.
Two distinct souls come out of the kitchen: Cilento cooking — fresh fish, some of it raw, cozze alla mediterranea with extra virgin olive oil, garlic and parsley, spaghetti alle vongole — and gourmet Neapolitan pizzas, made with a dough that rests at least thirty-six hours before entering the oven. The mozzarella di bufala campana comes straight from the tradition it belongs to.
A dish that tells a journey: from the Cilento coast to the center of Pavia, by way of thirty-six hours of leavening and the sea in March.
