Forty years ago, when Carsoli was already a crossroads between Roma and the depths of Abruzzo, Da Totò opened its doors, bringing with it the Neapolitan art of dough and fire. Since 1985 that entrance has welcomed those in search of something precise: a kitchen that knows where it comes from and is in no hurry to change.
The dining room is built for staying, not just for eating. Spacious, with room for families and a play area where children find inflatables and freedom to move. Those who come with children know that here there is no need to choose between a good table and a peaceful evening: the two coexist without compromise.
The wood-fired oven is the heart of the kitchen. The pizza that comes out of it strikes a recognisable balance: neither wholly Neapolitan nor wholly Roman, with a rim sturdy enough to hold its toppings and a bake that dries without burning. The fried dishes — from land and sea — come out of the pan light, without excess oil.
