From the kitchen come ravioli al nero di seppia (squid-ink pasta parcels) filled with grouper and smoked ricotta, paccheri with tuna, fregola with clams: fresh pasta made in-house, each dish built on the day's catch. The raw materials — red prawns, sea bream, lobster, gattuccio all'algherese (a local dogfish preparation) — arrive fresh every evening, and it shows on the plate, in texture and in flavour, without mediation.
