In the heart of Bavaria, just steps from Neuburger Straße, an Italian restaurant holds firmly to its distance from home: traditional cooking, wood-fired pizza and a family-run approach that has carried the same project forward for more than fifteen years.
In the Hammerschmiede district of Augsburg, Giuseppe and Michaela Palermo opened a door onto Italy more than fifteen years ago. They have run it together ever since, with the kind of continuity of gesture and welcome that only a family-run business can guarantee, day after day, season after season.
The dining room seats up to eighty-five guests for private and corporate dinners; in summer the sun terrace extends the space outdoors, bringing a touch of southern light to the heart of Bavaria. The menu ranges from fresh pasta to fish and meat specialities, with vegetarian, vegan and gluten-free options.
The wood-fired oven is the heart of the restaurant: this is where the original pizza is made, and where the fifty-centimetre Pinsa romana (Roman-style flatbread) is baked, prepared with a blend of Caputo wheat flour, soy and rice flour and left to rise slowly. A dough that demands patience, and rewards it with lightness and flavour.
