Pretoro is a medieval village clinging to the slopes of the Majella, in the Chieti area, where stone lanes climb upward unhurried. Here, set into the old watchtower that overlooks the historic centre, is a kitchen that tells the story of Abruzzo with rare fidelity.
The entrance is reached by walking the stone lanes of the historic centre, climbing up to the medieval watchtower that gives the restaurant its name. Since July 2022, Patrizia and Claudio Salvatore have looked after its identity, with the stated intent of preserving style, cooking and quality in keeping with local tradition, without giving way to simplification.
The most intimate dining room is carved directly from the rock: walls of bare stone, brick vaults, a soft light that turns dinner into a pause outside of time. The restaurant lies within the Parco della Majella (Majella National Park), and the surrounding territory shapes both the choice of ingredients and the entire kitchen's offering.
Patrizia Salvatore is both owner and chef: she cooks personally every day, selecting outstanding local ingredients for a menu that makes no compromises with Abruzzese tradition. Among the specialities most appreciated by guests is the torta del lupo (wolf's cake), the house dessert that closes the meal with the territory's authentic character.
