ristorazione — Rolle di Cison di Valmarino · Veneto
On top of a hill among the vineyards of Prosecco DOCG Conegliano Valdobbiadene, in Rolle di Cison di Valmarino, a farmhouse has been welcoming guests since 1957. For three generations, Ristorante Da Brun has carried forward the authentic cuisine of the upper Marca Trevigiana.
The farmhouse stands at the top of the hill, where the vineyards of Prosecco DOCG contend with the woods for the steep slopes of the Marca. The view embraces the surrounding hills — a territory that became a UNESCO World Heritage site in 2019 — and already from the entrance one senses that this place holds something more than a simple meal: a family story spanning nearly seventy years.
Inside, the spacious rooms with their fireplace tell of decades of genuine hospitality. Today it is Lino and his sister Marisa, grandchildren of founder Lino, who keep the tradition alive: a management style that leaves nothing to anonymity, equally capable of hosting banquets or reserving the right quiet for a family dinner. In the warmer months, the long vine-covered pergola moves the meal outdoors.
The embers of the grill are the heart of the kitchen: local beef, pork and chicken cooked over the fire, tender and fragrant. Alongside the meats, sopressa nostrana (local cured sausage), muset and vegetables picked from the seasonal garden make up a menu that follows roots, not trends, with bolliti (boiled meats), oven roasts and homemade desserts.
The meal closes as the house tradition dictates: an alpine coffee with grappa, almost an emblem. The page tells the story of every dish in detail.
