In the hills of the Cuneo area, in Carrù, one of Piedmont's oldest fairs has found its restaurant. Not a tribute, not a re-enactment: a direct continuation, carried forward by the same family since 2003.
In 2003 Carlo and Ezio — son and grandson of Rina — opened this restaurant in Carrù, bringing with them a family history woven into the historic Fiera del Bue Grasso (Fattened Ox Fair). The setting evokes that tradition with coherence: not a decorative citation, but the story of an authentic bond with the land and with the festival that has celebrated the Piedmontese cattle breed for centuries.
The dining room welcomes families, large tables and travellers passing through — the wide car park, designed to accommodate trucks and coaches too, says much about the open, unpretentious character of this place. The terrace with its play area completes a hospitality built for those who come to the table unhurried, at ease, as befits a kitchen that has never looked for shortcuts.
On the stove, bollito misto (mixed boiled meats) takes centre stage all year round, every day: not a seasonal offering, but a stance. It reaches the table with seven traditional sauces — bagnet verd, bagnet rus, cognà among them — all made in house. The restaurant also produces and sells grappa and amari flavoured with hazelnut and mountain herbs: the kitchen's work continues beyond the meal.
