ristorazione — Poggio Nativo · Lazio
In the Sabine hills, at Poggio Nativo, there is a place where the butcher's counter and the kitchen have never been separated. Since 1876, the Liberati ristomacelleria (butcher's shop and restaurant in one) has carried forward a double identity that is, at once, a craft and a family memory.
On the Via Salaria, at the fiftieth kilometre, a threshold crossed by five generations. Since 1876 the Liberati family has held together two crafts that elsewhere are kept apart: butchery, with its expertise in selecting cuts, and the restaurant, where that same raw material comes to completion at the table. A rare model, kept intact for a hundred and fifty years.
The dining room seats up to one hundred; in winter the heated veranda extends the space without taking away its character. It is here that Sabine tradition becomes lunch: the pasta dishes of a territory-driven kitchen, vegetables fresh from the garden, the unhurried pace of a service in no rush to reinvent itself, because it already knows where its strength lies.
The fire is the same as always: Italian wood charcoal, no shortcuts. The meats are cooked over the embers with the same care the family devotes to selecting them upstream. The grill and the butcher's counter are not two separate departments but a single gesture, divided between counter and stove, repeated for over a century and a half.
A hundred and fifty years of continuity, one family, one method. The page tells the rest.
