ristorazione — Susa · Piemonte
In Val di Susa, where the Alps close in around the pass toward France, there is an address with no fixed hours and no printed menu. Q/CINA Privé is born from a dialogue: the one chef Gianluca Circhirillo opens with each guest before the stove is even lit.
The entrance on Via Norberto Rosa 15 announces nothing conventional. There is no dining room open to the public, no tables to book online: the format is private by definition. Every experience begins with a conversation — preferences, intolerances, the rhythm of the evening — and from that initial exchange a course takes shape, built entirely around the guest.
The private dimension is not a stylistic flourish but the very structure of the service. With no fixed hours and none of the conventions of a traditional restaurant, the timing bends to whoever sits at the table: the composition of the dishes, the pace of the courses, even the length of the evening all grow out of that opening conversation. A formula that restores to dinner its oldest meaning — personal hospitality.
At the stove, Circhirillo carries two roots: Sicilian origins and a upbringing in Val di Susa that shaped him on Alpine produce. The result is a cuisine he himself calls alternative territoriale (territorial alternative) — venison ragù with whole-wheat bread crumble and taggiasca olives, Castel Magno cheese with pear carpaccio and toasted hazelnuts — where the territory reads directly on the plate.
