ristorazione — Floridia · Sicilia
In the hinterland of Siracusa, in Floridia, Pizzeria Mirò builds its evening scene around a wood-fired oven and doughs left to mature for more than forty-eight hours. Here, time is the first ingredient: a choice of slowness in a town that never stops.
Crossing the threshold on Viale Filippo Turati, one finds a room that owner Manuel has shaped around hospitality: warm, familiar, free of needless formality. The service is attentive and warm — customers notice it even before they describe the pizza — and that kindness is an integral part of the project.
To the table come ingredients chosen among the best local suppliers: juicy tomatoes, stringy mozzarella, cured meats and seasonal vegetables that change with the Sicilian agricultural calendar. Alongside the pizzas, the menu offers starters, crisp fried dishes and homemade desserts — a journey that goes beyond pizza and tells the story of a complete idea of cooking.
The wood-fired oven is, in Mirò's own words, «the true soul of the pizzeria»: it gives the pizzas a fragrance and flavour no other cooking method can replicate. The dough, made with selected flour and left to mature for more than forty-eight hours, reaches the oven light and easy to digest, ready to carry gourmet pairings with bold, unexpected flavours.
