ristorazione — Carrara · Toscana
In the centre of Carrara, where marble marks every corner of the city, L'Antico Forno da Stefano carries forward another form of craftsmanship: wood-fired Neapolitan pizza, made with a house-made leaven found nowhere else, one that has led more than one customer to call it the best pizza in northern Italy.
The door on Via Roma opens onto a place that needs no elaborate introduction: the scent of the traditional wood-fired oven tells the whole story before you even step inside. Stefano Pelletti chose Carrara to build a reference point for artisanal Neapolitan-style pizza, a stronghold of quality in the heart of the Apuan city.
The atmosphere is informal, much like the way it is run: Stefano and Eva tend to every table with the same care they bring to selecting ingredients. Many of these are hard to find elsewhere, chosen one by one to guarantee the variety and quality that customers recognise and seek out. The place welcomes those who sit down as well as those who prefer to take away.
The secret of the dough is the house's exclusive leaven: unsalted, elastic, able to give the pizzas a soft texture and a digestibility that customers describe as rarely found elsewhere. Stefano personally checks the oven's temperature before every batch, because every stage of preparation — from the dough to the baking — stays under his direct eye.
The customer page lists opening hours, menu and directions to reach L'Antico Forno da Stefano, in the heart of Carrara's historic centre.
