The place
In the heart of Carrara, on Via Roma, Pizzeria L'Antico Forno da Stefano is a point of reference for lovers of artisan Neapolitan-style pizza. The traditional wood-fired oven and the venue's own exclusive yeast give the pizzas a soft, light texture that is easy to digest. Stefano, pizza maker and owner together with Eva, carefully selects high-quality ingredients, many of them hard to find elsewhere, and personally oversees every stage of preparation. The atmosphere is informal and welcoming, with service ranging from dining in to takeaway. Customer reviews reward the passion and professionalism on show, naming these pizzas among the best in northern Italy.

The base of the dough is stone-ground flour, combined with biga and pre-ferments. The choice is made even before the toppings, because this is where the structure of the finished product begins.
The dough rests for about 24 hours: a length of time that develops aromas, lightness, and sensory qualities difficult to achieve with faster processes.
Ingredients are selected with the goal of using 100% Italian products, with particular attention to the Tuscan territory.
Vegetables and ingredients change throughout the year according to the season, making room for new combinations without breaking the link with tradition.
