Caterina Tripaldi left her university studies to follow a precise calling: becoming a pastry chef. After qualifying at the Università dei Sapori (University of Flavours) in Perugia, she took over the historic Ariston pastry shop on via della Pallotta, carrying into that threshold, already rich with memory, the light weight of a dream turned into a craft.
Behind the counter, the specialities of Umbrian tradition line up: torcolo and rocciata, prepared according to recipes handed down over time, sit alongside mignon pastries, individual portions, and fresh and dry confectionery. The display case also offers vegan, lactose-free and gluten-free options, so that no dietary need has to mean giving up on flavour.
In the pastry shop's own workshop, every sweet is made by hand, with fresh, carefully selected ingredients. This is where custom cakes for birthdays, weddings and ceremonies take shape — each one designed to measure — along with the pastries prepared for catering, serving private parties and special occasions.
