In the Panificio San Nicola workshop, every day begins at the workbench: selected flours, carefully chosen ingredients, a controlled supply chain running from field to finished product. It is here, in the Rieti basin, that an artisan approach to bread-making takes shape and stays true to itself, with no shortcuts, one batch of dough after another.

The shelves tell the story of the whole day: whole-wheat bread, pizza al taglio (sliced pizza) in many variations, focaccia filled with cured meats, calzoni and fresh pastries made daily.
