ristorazione — Paris · Île-de-France
At number 14 Rue Mandar, in Paris's second arrondissement, an unexpected passage opens: an Italian osteria (traditional Italian restaurant) where the founders' Calabrian tradition becomes everyday cooking, pasta trafilata al bronzo (bronze-drawn pasta) and long-leavened pizza, every day of the week.
The door on Rue Mandar doesn't announce a restaurant like any other: it announces a place where the journey toward Italy begins already at the threshold. The warm atmosphere and air-conditioned setting welcome guests seven days a week, from noon to half past ten, in a second arrondissement that didn't expect to find this domestic warmth.
Ersilia runs the dining room: with the same care and generosity with which the founders, raised in Italy with Calabrian roots, imagined this place. A family-run style you can feel in the way every table is looked after, in the wine list celebrating Italian terroirs — Chianti, Barolo, Nero d'Avola, Prosecco — and in the aperitivo (pre-dinner drinks) with classic spritzes and house cocktails.
In the kitchen works Aldo, a master pizzaiolo (pizza maker) with fifty-three years of experience: every day he prepares fresh pasta trafilata al bronzo (bronze-drawn pasta) following family recipes, including pasta al tartufo (truffle pasta), and long-leavened pizzas with a crisp edge. The ingredients come from selected Italian producers, with the founders' Calabrian tradition guiding the choice of raw materials.
