Gianni, Andrea and Sesto Paciotti run La Terrazza di San Guido the way one runs a home: door open, and just the right measure in everything. The dining room looks out over a view that shifts with the light: the land around Gualdo Tadino seen from six hundred metres, pine woods all around, the sky catching fire at sunset in summer. In the kitchen, the pasta is made strictly by hand: tagliatelle alla Sesto, white lasagne with black truffle, crescia with barbozza — the house specialty, at eight euros — are the result of a daily practice that leaves nothing to convenience.
