In the countryside between Frosinone and Cassino, where Ciociaria still holds on to its oldest flavours, a restaurant born as a fraschetta (informal countryside tavern) brings back to the table a cuisine that time threatened to leave behind.
Alessandro Testani opened La Fraschetta del Ciociaro in February 2025, along the Casilina road in Torrice, with a clear mission: to bring back to light the simple, forgotten dishes of Ciociaria. Not a reinterpretation, but a rediscovery — led by someone who knows that cuisine from within and keeps its memory faithfully alive.
At lunch, the restaurant offers a full set menu from starter to dessert at a fixed price, with a selection that changes with the seasons and the land. Ciociaro cured meats and cheeses open the meal, and those following a gluten-free diet find careful attention: every need is considered without the rhythm of the table being affected.
The pasta is made in-house every morning: gnocchi caserecci, fini al ragù ciociaro, ravioli with porcini mushrooms. On the stove, the sugo alla pecora (mutton ragù) simmers for seven hours, until the meat yields all its flavour to the sauce. These are times that cannot be shortened, and Testani looks for no shortcuts.
