Arcidosso, a medieval village on the slopes of Monte Amiata, holds within the walls of the Cassero (the fortified medieval keep) a fourteenth-century tower that since 2022 has been home to one of the most unexpected Neapolitan pizza offerings in the Maremma. A meeting between Naples and Tuscany that never stops surprising.
Once through the doorway of the medieval tower, restored with meticulous care, you find yourself in a space that carries eight centuries of history. The ancient walls of the Cassero frame a project born from the passion of Sergio Donnarumma, a Neapolitan pizza maker, and his partner Vincenzo: an idea conceived during lockdown that became, in 2022, a place opened in the heart of the village.
Inside the tower, the dining room welcomes guests with an intimate atmosphere that invites you to linger. The tastings are curated down to the smallest detail: they begin with a tour of the restored rooms and continue with an aperitif on the small panoramic terrace overlooking the castle of Arcidosso, before sitting down at the table. A ritual that turns dinner into a journey.
Behind the stoves, Sergio Donnarumma brings a path built with rigour: training at the Istituto Alberghiero delle Forbici (hospitality institute), five years at the Michelin-starred Scacciapensieri, then a year and a half devoted to studying Neapolitan dough. In 2023 he placed at the Campionato mondiale del Pizzaiuolo (World Pizza Maker Championship) in Naples, in the Pizza Napoletana STG category. Neapolitan technique meets Tuscan raw materials here.
