In the Asti area of Monferrato, on the hills of Valtriversa, Azienda Agricola Il Filo Rosso has brought back to life an ancient Piedmontese crop: saffron, grown organically alongside berries and hazelnuts of the prized Tonda Gentile Trilobata variety.
On the hills of Villafranca d'Asti, the rows and berry plantings grow free of chemicals and herbicides: strawberries, raspberries, blackberries, blueberries and Tonda Gentile Trilobata hazelnuts coexist within a certified organic system, where each variety follows the rhythm of Monferrato's seasons. The fruit is hand-picked every morning, at just the right point of ripeness.
In the early hours of the morning, while the crocus flowers are still closed, the saffron stigmas of ilFiloRosso are gathered one by one. Separating the stigmas and drying them takes place within a few hours: a rigorous protocol that preserves the spice's aromatic qualities and beneficial properties. A commitment that has restored saffron among the typical products of the Asti hills.
Artisan processing gives rise to berry compotes — free of preservatives and chemical thickeners — creams made from Tonda Gentile Trilobata hazelnuts, and two specialties built around saffron: Ambra, which combines Italian acacia honey with the spice, and Safran liqueur, also available in a version aged in ash barriques. The carefully designed packaging makes it a refined choice for wedding favors and gift boxes.
