The place
In the heart of the Monferrato astigiano, Azienda Agricola Il Filo Rosso grows saffron, soft fruit and Tonda Gentile Trilobata hazelnuts under organic farming methods. The saffron is harvested at dawn, its stigmas separated and dried within a few hours to keep their aromatic properties intact. The fruit, picked by hand each morning at just the right point of ripeness, is turned into artisan preserves with no preservatives or chemical thickeners. The hazelnuts become spreads and sweets rooted in the local territory. Among the specialities, Ambra combines acacia honey with saffron, while the Safran liqueur offers this precious spice in a version aged in ash barriques as well.

Enter the mapIn the making · How it is made
Saffron is harvested in the early hours of the morning, while the flowers are still closed. The fruit reaches the workshop within a few hours of picking, at just the right point of ripeness.
The saffron stigmas are separated from the flower and dried within a few hours of harvest, a process that preserves all the beneficial properties and the finest aromatic qualities of the spice.
The fruit is turned into preserves with no added flavourings, preservatives or chemical thickeners. The Tonda Gentile Trilobata hazelnuts are selected, shelled and simply roasted before becoming spreads and sweets.
