In the countryside near Cannara, where the Umbrian plain opens toward Assisi, a farmhouse holds a story of the table that begins with the land and never stops surprising it. The cipolla di Cannara (Cannara onion) — a local presidio and point of pride — runs through the entire menu, from the à la carte selection to the tasting menu.
Hazienda occupies a farmhouse in the artisan district of Cannara, just a few kilometres from Assisi, and from the entrance onward the tone is that of a place that has chosen to stay rooted in its territory. The tasting menu is built entirely around the cipolla di Cannara: every course carries its sweetness and its story, from soup to side dish, without ever exhausting its possibilities.
In the elegant dining room stands the botte delle meraviglie (wonder cask): a hundred selected labels, available even to those who come only to taste, without dining. The wine bar is a space of its own, with a service designed for anyone who wants to linger over Umbrian wine and beyond. In summer, the tables move poolside, where the countryside becomes the backdrop.
The hearth is visible from the dining room: the embers are not a detail but the heart of the kitchen, with national and international meats selected and cooked to order. Alongside, the first courses come from house-made pasta, bronze-drawn. The coffee — bought green, roasted and blended in-house — comes in three proprietary blends: Hazienda, 21 Agosto and Cremosa. The pastry is entirely made in-house.
