Sui Colli Romani, dove la tradizione del pane è ancora un rito quotidiano, Forno Sfizi e Vizi apre le porte ogni mattina a Marino. Dal 2013, la famiglia Frezza porta avanti un mestiere antico con farine selezionate e tempi di lievitazione che non si abbreviano.
Francesco Frezza founded the bakery in May 2013, together with his wife Michela and a close-knit staff. What began as an artisan workshop on Via Palaverta in Frattocchie became, within a few years, a point of reference for the Castelli Romani area: a family-run business where the same gesture is repeated every day, with the same care.
Behind the counter, Michela personally oversees the pastry: sweet and savoury tarts, traditional biscuits from Lazio, homestyle desserts that change with the seasons. Alongside, the display case offers gourmet fried specialities — supplì (fried rice croquettes) prized for their easily digestible dough and bold flavours — and rustic focacce ready for a quick break or the family table.
The oven is the heart of the workshop. Every day it turns out several kinds of bread made the traditional way: superior-quality flours, slow fermentation, traditional baking. The pizza alla pala (bread-oven flatbread pizza) — in variants such as amatriciana with chilli, with aubergine, and others — follows the same principles. Since 2015, Eccellenze Italiane has recognised this craftsmanship in its national registry.
