Cross the threshold, and the scent of old-fashioned flour greets you before a single word is spoken. The pizza dough is made from ancient wheat flours grown on the farm, chosen for their digestibility and the fragrance they release in the oven. Mozzarella and tomatoes come directly from Italian producers, worked on site into thick, flavourful sauces.
The dining room glows with the colours of Italy: the tables sit close to the pizza oven, so every guest can watch the pizzaiolo's hands as he stretches and tops each pizza. Outside, the arcades offer shade and a direct view of Monségur's historic halle (covered market) — the market that marks time in this medieval village.
Every Wednesday evening the kitchen becomes a double stage: the ovens and the musicians of the Mercredis du Jazz share the rhythm of the night. Local and international jazz musicians bring their repertoire among the tables, while the menu changes with the seasons — risottos, pinsas, tiramisu and panna cotta — true to ingredients of certified origin.
