In Norcia, an Umbrian hill town at the foot of the Sibillini mountains, an artisan chocolate shop has been working cocoa beans since 1980. The workshop's glass front is open to anyone who wants to look: the chocolate is still made by hand, in full view of whoever walks in.
At the shop on Via della Stazione, a glass panel separates visitors from the workshop: you can see the marble counter, the crates of cocoa beans, the production cycle running from raw ingredient to finished bar. Production has been artisanal since 1980, and has never moved elsewhere.
The claim on display in the shop is plain and unadorned: "Here we make chocolate the old way." Arianna Verucci inherited the brand founded in the 1980s and keeps its method alive, passing on the same dedication to the families who take part in the Choco Pic workshops, where hands learn before the mind does.
On the shelf sit bars, truffles, spreadable creams and Ruby, the pink chocolate made from red cocoa beans, the most photographed and most requested of all. All the chocolate sculptures are gluten-free; lactose-free options are also available on request. The range is wide, and tastings are included.
