Everything begins with the choice of raw material: the milk of the Murgia Barese, selected for its distinctive character and its deep bond with the Apulian territory. Fresh crates arrive at the workbench every morning, because for Lattenatura the short supply chain is not a marketing argument but the foundation of the entire production.
Lattenatura's cheesemakers braid, shape and form by hand, following the rules of Apulian dairy tradition and, when needed, giving in to the urge to innovate with creativity. It has been this way for over fifty years: every mozzarella, every scamorza, every nodino is born from a precise gesture, handed down and refined over time without yielding to the haste of industrial production.
From the shelf come burrata, stracciatella, cow's milk ricotta, aged caciocavallo, scamorze and yogurt made in-house at the dairy: a range that spans the whole of Apulian dairy tradition. The regional mark Prodotti di qualità Puglia (Quality Products of Puglia), adopted under a strict standard, certifies what customers recognise at the first taste: a quality rooted in the territory, impossible to replicate elsewhere.
