On the high pastures of Capracotta, in the Alto Molise, mountain grass gives the milk a character no lowland can match. The Di Rienzo family farm has run the entire production cycle for generations, from cattle rearing to the aged wheel, in a landscape that is already a story in itself.
The landscape that opens before the masseria (farmstead) is the same one the Di Rienzo family has watched over for generations: cattle pastures at high altitude, in the Alto Molise, where the milk gathers the scents of wild grass and mountain air. A farm run as a complete cycle, born from the care of those who know every corner of this territory and chose never to break the chain between animal and wheel.
From the milk of their own cattle — raised at zero food miles on the farm's pastures in Capracotta — comes fresh ricotta, fior di latte, scamorza, stracciata and mountain mozzarella. No outside sourcing: the raw material is simply what the land produces each day, turned in the workshop with artisan methods the family has handed down since the business opened its doors, in 2012.
On the aging shelf rest the caciocavallo wheels at different stages of maturation: it is the house specialty, the reason customers keep coming back to the masseria on Contrada Macchia, where the farm shop guarantees direct sales. Alongside the cheese you will also find pizza ripiena, ricotta focaccia and fiadone with cheese and eggs — homely preparations that round out the picture of what is made here.
