Caseificio La Masseria runs its own cattle farm, ensuring direct control over the raw material. The milk comes exclusively from cows raised on the pastures of Capracotta.
The cheeses are made using traditional artisanal methods, following techniques handed down through the Di Rienzo family. Skilled hands transform mountain milk into dairy products according to time-tested recipes.
Production follows an entirely local chain: from farming to processing, all the way to direct sale at the farm's own shop. Every stage takes place within the masseria (farmstead) in Contrada Macchia.
