On the plain outside Modena, in Formigine, there is a workshop where the pasta sheet is still rolled by hand every morning. Since 1986, when nonna Pina and her sister Gianna founded the bottega (workshop), nothing essential has changed.
On the marble counter, the work begins at dawn: sheets of pasta rolled fresh, fillings composed of selected ingredients, dough that changes shape under the hands. Every day, without exception. This is the artisan discipline that sets a living pasta apart from one made on a production line — practised here, without interruption, for forty years.
The hands at work belong to a family. The bottega (workshop) was founded by nonna Pina and her sister Gianna: a gesture handed down, not a method learned from a manual. The Emilian tradition of sfoglia (rolled pasta sheet) — tortellini, tortelloni di zucca (pumpkin-filled pasta), passatelli — lives on in this direct passage from one generation to the next.
On the shelf, the shapes of tradition stand in line: yellow and green tortellini, tortelloni di zucca, lasagne, tagliatelle.
