In the Valle del Baccano, where an extinct ancient volcanic crater shaped a soil of rare fertility, Borgo del Baccano was founded in 2021 with a precise project: to capture in the bottle the authentic character of a territory that Lazio winemaking has frequented for centuries and that today tells its story through organic farming.
Fifty-three hectares of vineyard on volcanic hillside soil, with exposures studied to bring out the best in each variety: the crater's soil — porous, mineral, able to retain heat without dispersing it — becomes the first and most faithful maker of the wine. The estate produces Roma DOC in white, red, and rosé styles, with native varieties such as Grechetto at the heart of its winemaking project.
In this agricultural landscape, every intervention follows the principles of certified organic farming: natural fertilization and soil care are the only techniques allowed, because the crater's soil — already extraordinarily fertile — needs no correction. The estate stands along the Via Francigena, near the ancient Mansio Ad Vacanas, where the mosaics of the Villa dei Severi recall how long this corner of Lazio has been inhabited.
On the cellar shelves, three distinct souls stand out: the Piana del Mosaico line — certified organic, available in white and red — the Collezione Roma DOC wines, and the Riserva, which brings ageing to its highest point. Every label comes from the same 53 hectares, yet tells a different nuance of the volcanic soil that produced it.
In the Borgo del Baccano cellar, every bottle is an invitation to discover more closely the Valle, its wines, and the thousand-year history that surrounds them.
