Tuscan Maremma, inland from Grosseto — here, since 1960, Azienda Agricola San Francesco has grown cereals and legumes on fields that, since 1990, have followed exclusively the certified organic method. A story of land and of choice, rooted in one of Italy's most unspoiled farming territories.
The farm's fields are home to ancient grains such as Senator Cappelli, a variety that industrial selection had nearly erased. Grown without pesticides or herbicides, under CCPB certification, these cereals follow the natural cycles of the Maremma soil. It is from these rows that everything else begins: a path from seed to finished product that leaves nothing to outside hands.
The harvested wheat is stone-milled shortly before packaging, a precise technical choice that preserves the nutritional qualities of the whole grain. From Senator Cappelli semolina come fusilloni, casarecce, spaghetti and tagliatelle, drawn through bronze dies; from the flours, a range spanning from type 00 to multigrain, along with Verna flour and whole-grain barley flour.
Alongside the pasta and flours, the farm's shelf carries organic tomatoes grown in its own fields: passata, polpa, pelati, basil sauce and arrabbiata sauce, rustichella sauce. Cereals, legumes and ready-made soups round out a range available at the farm shop or online, with shipping across Italy and wholesale supply for restaurants and hotels.
