The place
Azienda Agricola San Francesco was founded in 1960 in Grosseto and since 1990 has dedicated itself entirely to certified organic farming. Stefano Tanzini and Barbara Cocci grow ancient grains such as Senatore Cappelli wheat, turning them into bronze-die pasta and flours stone-milled shortly before packaging. Organic tomatoes become genuine passata, peeled tomatoes and sauces. Cereals, pulses and soups round out the range. The estate's farm shop and online shop allow customers to buy the products of the Maremma directly.
The origins
Azienda Agricola San Francesco took shape in 1960 amid the lands of the Maremma grossetana (the Maremma area of Grosseto province). In 1990 Stefano Tanzini and Barbara Cocci made the definitive move toward certified organic farming.

Azienda Agricola San Francesco grows cereals, pulses and tomatoes according to organic standards. The estate's fields are managed without the use of synthetic chemicals, herbicides or pesticides. CCPB certification guarantees compliance with European organic protocols.
The estate grows ancient grains such as Senatore Cappelli and Verna wheat. These varieties, selected for their organoleptic and nutritional qualities, are sown and harvested in the fields of the Maremma. Cereals and pulses round out the estate's range of crops.
The flours are stone-milled shortly before packaging. This process preserves the nutrients of the grain and keeps the properties of the wheat germ intact. Slow milling avoids overheating the flour and retains its aromatic profile.
Pasta made from Senatore Cappelli wheat is extruded through bronze dies, a technique that gives the surface a porosity ideal for holding sauces. Drying takes place at low temperatures to preserve the organoleptic qualities of the wholewheat semolina.
The tomatoes grown on the estate are turned into passata, peeled tomatoes, pulp and sauces. Processing takes place shortly after harvest, to keep flavour and nutritional properties intact. The sauces are made with the estate's own organic ingredients, basil and natural flavourings.

Type 00 soft wheat flour, pizza flour, multigrain flour, wholewheat Senatore Cappelli flour, remilled semolina, barley flour and type 2 Verna wheat flour. Milled shortly before packaging to preserve aroma and nutrients.
Tomato passata, peeled tomatoes, pulp, basil sauce, bruschetta sauce, rustichella sauce and arrabbiata sauce. Made with organic tomatoes grown in the estate's own fields, with no preservatives or additives.
Hulled and pearled farro, barley, organic pulses and ready-made soups. The cereals and pulses come from the estate's own crops and are selected and packaged for direct sale.
The estate's farm shop offers the full range of fresh and preserved products. The online shop allows purchases with home delivery. The estate also supplies restaurants, hotels and catering services on a wholesale basis.
