produttori — Castiglione del Lago · Umbria
On the hills of Lake Trasimeno, three hundred metres above sea level, the Bittarelli family has worked the land since 1940: first as tenant farmers, later as owners of an organic estate that has made Fagiolina del Trasimeno its emblem.
Thirty hectares of Umbrian hills, farmed organically with crop rotation: this is the measure of the patience with which the Bittarelli family has, since 1940, pursued a way of working the land that has never given in to the shortcuts of intensive agriculture. The soil is tended as it has always been, season after season, in step with its own rhythms.
Alongside traditional grains and legumes — farro, barley, cicerchie — grows Fagiolina del Trasimeno, an ancient native bean protected by the consortium of the same name and cultivated here for generations. Small and delicate, it is still sown and harvested by largely manual methods, since heavy mechanisation would compromise its integrity: a stronghold of biodiversity in the heart of Umbria.
From field to the shelves of the estate's Agri Shop, open daily: organic legumes and grains, stone-milled flours, soups, sauces and the "I già pronti" (ready-to-eat) range, all VeganOk certified since 2017. A supply chain entirely run by the family, who package and ship across Italy without ever losing control over what reaches the table.
An educational farm since 2013, with an Agriristoro (farm restaurant) open by reservation: the page tells you how to experience this corner of Umbria up close.
