ristorazione — Bormio · Lombardia
In Bormio, where the Rhaetian Alps mark the border with Switzerland and the seasons turn with real clarity, Aquolina has carried forward an entirely artisanal confectionery tradition for thirty years. A family workshop in the heart of the historic centre, recognisable by the scent of fresh butter that reaches you before the threshold does.
Thirty years of presence in the centre of Bormio are not improvised: Aquolina is one of those workshops that passers-by recognise before they even step inside, from the familiarity of the place and staff who welcome you with the same ease as always. Family management has continued unchanged over time, and the artisanal experience is passed on intact from one season to the next, without interruption or shortcuts.
Behind the counter, the display case tells the story of Valtellina with precision: bisciola, baci made of buckwheat and milk chocolate, strudel prepared with local, zero-kilometre apples. The artisanal gelato changes with the seasons, staying true to whatever raw ingredients the territory offers at any given time. Every tray on display is made in-house, without exception and without anonymous ingredients.
The workshop is the hidden heart of the business: this is where the semifreddi, meringue cakes, artisanal biscuits, chocolates and pralines are made. On request, the workshop prepares cakes for celebrations — weddings, birthdays, first communions, confirmations — both in classic versions and in interpretations tailored to the customer's taste. A wide-ranging production, made entirely on site.
