At the foot of Monte Amiata, where the Mediterranean scrub gives way to woods of beech and chestnut, Federico Guidotti founded his apiary in 2021, taking up the legacy passed down by his grandfather. A young enterprise rooted in the Amiata territory and in the Maremma, built on a deep knowledge of an ancient landscape.
More than five hundred hives spread across the slopes of Monte Amiata and the countryside of Pitigliano, Sorano and Sovana: this is the map that Federico Guidotti, who founded the business at twenty-six, has built since 2021. Every site is chosen away from urban centres, in unspoiled areas where human pressure does not alter the quality of the harvest and the botanical variety remains intact.
Guidotti honey is predominantly monofloral: each type is born from the bees' fidelity to a single flowering botanical species, following the natural rhythm of the seasons in Amiata and the Maremma. The result is a product that carries within it the precise character of the flower and the place, without blending that would flatten its aromatic and flavour profile.
From the harvest to the extraction, every step is carried out without preservatives or pasteurisation: the aim is to preserve the organoleptic properties exactly as nature formed them, without speeding up or correcting the process. This care earned the Tuscany in the World recognition in December 2025, presented by mayor Vivarelli Colonna and member of parliament Manuel Vescovi, confirming a quality already recognised by the market.
Guidotti honey is now stocked in more than thirty Conad stores across Tuscany, Umbria and Lazio, within the Ori di Toscana selection, and is also available directly from the producer in Castell'Azzara.
