ristorazione — Lecce · Puglia
In the baroque heart of Lecce, where the lanes of the historic centre hold centuries of Salento life, a bottega has stood unchanged since 1941. Three generations of the Giannone family, one single address on Via Giuseppe Libertini, one single specialty to safeguard: the puccia salentina.
On Via Giuseppe Libertini, within the baroque fabric of Lecce's historic centre, the sign of the Antica Pucceria Giannone has never changed address. From 1941 to today this is the only site: no branches, no replicas elsewhere in the world. A place that never moved while the city grew around it, one that the people of Lecce recognise as an unchanging fixture of daily life in Salento.
The interior is spartan, just as it was at the start: no redesigned furnishings, no veneer of modernity imposed upon it. On the walls one can still read the messages left by customers over the decades, a spontaneous layering of loyalty that cannot be bought or feigned. Three generations of the Giannone family have taken their turn behind the same counter, safeguarding the same formula without additions or omissions.
The bread for the puccia is baked here, every day, with the same soft dough that customers describe as well baked and full of flavour. Each puccia takes shape on the spot, before the eyes of whoever orders it: the fillings, made with fresh ingredients from Salento, are chosen and combined freely, within a tradition that Italy's first pucceria has safeguarded for over eighty years.
Giuseppe Giannone, awarded the Premio Cucina Italiana UNESCO, carries forward a legacy built on eighty years of precise gestures and carefully chosen ingredients. The page tells the rest.
