Since 1885, every morning the door of Alimentari Schivo has opened onto the same gesture: welcoming those in search of the best the Asiago plateau has to offer. Founded by the great-grandfather of the current owner in Gallio, the shop has reached its fifth generation without ever changing its calling — a case of commercial continuity that, in Italy's food trade, has become rare.
The counter is the heart of the shop: Asiago DOP cheese in its three ageings — dolce, mezzano and stravecchio — alongside Speck di Asiago and a selection of local cured meats. Each product carries the precise character of the plateau's pastures and woods, chosen with the same care the Schivo family has upheld for over a century.
The sandwiches are made to order, using products from the counter: fresh bread, cured meats, cheeses. Anyone stopping by during a bike ride or a walk across the plateau finds a service that is anything but improvised — the very same ingredients that fill the display cases are sliced and assembled on request, with the same care that sets the shop apart.
