Artisan production of DOP buffalo mozzarella is concentrated in certain plains of Campania — Mondragone, Battipaglia, Capua, Eboli — where dairy tradition is tied to the raising of the Mediterranean buffalo.
The plains of Mondragone, in the province of Caserta, and of Battipaglia, in the province of Salerno, share a low-lying, damp geography that for centuries discouraged permanent settlement while favouring extensive grazing. On this land, reclaimed through hard labour, where water rises close to the surface and the soil holds a natural coolness, the Mediterranean buffalo found conditions it could not have replicated elsewhere. It is no accident that production of the DOP mozzarella is concentrated in precisely this stretch of Campania: buffalo milk here is the direct outcome of a precise environmental balance, not an arbitrary choice.
Raw buffalo milk is noticeably richer in fat and protein than cow's milk, and this density shapes how the curd behaves during processing. Spinning — the central operation of the process — involves working the matured curd with very hot water, using a ladle and a wooden stick to lift and stretch the mass until it becomes smooth and elastic. Traditional shaping then follows through hand-cutting: the cheesemaker separates individual portions by pinching the paste between thumb and forefinger, a gesture that gives the product both its rounded form and its very name. The mozzarellas are then cooled in tanks of cold water and salted. The resulting rind is thin, with a white tending toward porcelain; the inner paste, in the first eight to ten hours after production, retains a slight elasticity that gradually gives way to a softer, more yielding texture.
The standard for the Protected Designation of Origin — recognised by the European Union — defines the shapes allowed beyond the classic rounded one: bocconcini, ciliegine, perline, nodini, ovolini and trecce, each with different weights. The protected production area covers territories in the provinces of Caserta, Salerno, Naples and Benevento in Campania, extending into parts of southern Lazio, Puglia and Molise. The Consorzio di tutela della Mozzarella di Bufala Campana DOP (the consortium responsible for protecting Mozzarella di Bufala Campana DOP) oversees compliance with the standard and use of the mark.
In the plains of Battipaglia and Eboli, as in those of Mondragone and Capua, dairies still work in the early morning hours, when freshly milked milk is transformed within a matter of hours. This close timing between milking and processing is integral to the quality of the product: the freshness of the milk shapes the development of the microflora that determines the final aromatic profile, the bouquet that sets buffalo mozzarella apart from any imitation. The territory, in this sense, is not merely a backdrop but an active component.
