Frico is a traditional preparation made from melted Montasio cheese, in crisp or soft variants with potatoes, originating in the Carnia area and found throughout Friuli. It stands as one of the emblematic dishes of the region's frugal mountain cuisine.
In the malghe (mountain dairy huts) of Carnia, cheese was never wasted. The rinds, the irregular pieces, the leftovers from the daily working of Montasio were gathered and melted in a pan: from this gesture of alpine domestic economy frico was born, a preparation that Tolmezzo and the surrounding valleys have claimed as their own for centuries. Carnia, a mountainous territory in the province of Udine that stretches between the Carnic Alps and the Tagliamento basin, forged a cuisine in which nothing was discarded, and frico is its most direct expression.
The preparation splits into two distinct variants, each with its own logic. The crisp version — thin, golden, almost translucent at the edges — is made by melting the cheese in a pan until the fat separates and the mass sets into a compact sheet, which becomes brittle once cooled. The soft version, heartier and more rooted in the inner valleys, incorporates potatoes cut into small pieces and often onion: the result is a dense cake that holds its heat for a long time and, in Carnian households, made up a complete meal. The traditional Tolmezzo recipe calls for roughly one kilogram of potatoes to half a kilogram of mixed cheeses, with different agings balancing one another in the cooking.
Montasio is the central reference, but the historical practice of the malghe called for cheeses at different stages of aging to be mixed together, precisely because this was a dish of recovery. This layering of flavours — the fresh cheese that stretches, the semi-aged that binds, the aged that gives character — is what sets a carefully made frico apart from a simple cheese fritter. The technique demands patience in cooking over low heat and the ability to judge the moment when the mass is ready to be turned without breaking apart.
Over the course of the twentieth century, frico crossed the borders of Carnia to become a reference point for the whole of Friulian cuisine, found in the osterie of the plains as much as in the mountain trattorie. This passage was not without simplification: the industrialised version, or the one made with a single standardised type of cheese, drifts from the original complexity. Tolmezzo and the towns of Carnia remain the point of reference for anyone seeking the preparation in the form most faithful to the context that produced it — a context of alpine pastures, short seasons, and a dairy economy that shaped both landscape and table with the same hand.
