The place
Trattoria Paoli was founded in 2009 in the nineteenth-century building in San Bonico that once housed artisans, a slaughterhouse and the town's public weighing station. Paolo Ravella runs the kitchen with cooking rooted in Piacenza's tradition and touches of national cuisine, while Paola Sghiavetta, a sommelier certified by Fisar, manages a cellar of around three hundred labels. The menu follows the seasons, alternating meat and fish, in a refined setting brought back to life through careful renovation.
From 1988 to today
Paolo Ravella began his career in dining in 1988. In 1992 he met Paola Sghiavetta again, a fellow student from the hospitality school where both had trained.
Why you can trust it
