In the making · The method
The meats are smoked in the offset smoker using exclusively oak wood, following the canons of Texan tradition. The slow cooking allows the aromatic smoke to penetrate deep into the cuts.
Top-quality cuts are aged to ensure tenderness and flavor. Before being cooked over the coals, the meats receive a seasoning that enhances the organoleptic character of each cut.
From house-made bread to smoked bacon, from BBQ sauces to marinades: every element of the dish is prepared in-house, following recipes that honor American tradition.
Alongside the smoking process, the wood-fired oven allows for cooking over the coals, giving the dishes the bold, distinctive flavors typical of Texan barbecue.
