The place
Franco Petrillo founded his artisan norcineria in Fondi in 1986, turning at twenty-four a passion for the art of curing pork into a business recognised on an international level. In 1997 he opened a workshop dedicated to processing pork from Lazio, further expanded in 2014. Fondi's traditional cured meats, such as the aged sweet sausage and the salame fondano, are made with certified meat from pigs born, raised and slaughtered in Lazio, with no gluten, lactose or additives.

The meat comes exclusively from certified Italian farms. The pigs are born, raised and slaughtered in Lazio, sourced from the Cristofari Roberto company of Pomezia.
The artisan workshop in Fondi transforms pork into cured meats typical of Fondi's tradition. Processing follows handed-down traditional methods, with no gluten, lactose, caseinates, GMO products or polyphosphates.
Curing follows the timing and methods of local tradition. Each cured meat is monitored with care until it reaches optimal maturity.
The cured meats produced in the workshop, along with poultry, are sold directly to the public at the sole premises on Via Giuseppe Toniolo in Fondi. A home delivery service is also available.
