The place
On the shores of Lago del Turano, Azienda Agricola Alessandro Parente Le Prata brings together tradition and sustainability in its dairy and vegetable-garden excellences. The aged pecorino is made from raw milk worked by hand, cared for manually through every stage of ageing. Alongside the cheeses, the chemical-free vegetable garden yields zero-kilometre produce and the raw material for preserves, jams and savoury spreads made in small batches following family recipes, with no preservatives. The sheep's milk cheeses are made from raw milk worked according to traditional methods, without pasteurization, preserving their original organoleptic character.
Each wheel is monitored by hand throughout slow ageing in controlled conditions, with daily care that shapes the cheese's character as it develops.
The farm's vegetable garden is grown without chemical substances, respecting seasonality and the biodiversity of the land around Lago del Turano.
Vegetables from the garden become preserves, jams and savoury spreads, prepared in small batches following family recipes, with no added preservatives.
