Production begins with the selection of the pork destined for processing. The workshop in Patrica works the different cuts of the animal according to the final purpose of each product.
The meat is prepared following the recipes of Lazio's tradition. Fresh pancetta is cut, generously seasoned with spices and cased. The guanciale (cured pork cheek) follows its path of curing. The filetto (tenderloin) is wrapped in lardo (cured pork fat) according to the traditional technique.
The cured meats follow different curing times. The guanciale matures slowly to develop its flavour and texture. The coppiette (dried spiced meat strips) go through the drying process that gives them their character in Ciociaria's tradition.
The shop offers the workshop's products alongside a full butcher's counter, cheeses and local specialities. Direct sale allows contact with customers and the possibility of shipping.
