In the making · The method
The Morello Forni wood-fired oven, often described as the Lamborghini of specialist ovens, is the beating heart of the kitchen for baking authentic Neapolitan pizzas.
Ravioli and cannelloni are prepared daily in the kitchen, while dried pasta is cooked to order to guarantee maximum freshness and faithfulness to traditional recipes.
Olive oils from Piemonte and the Chianti region, carefully aged balsamic vinegar, buffalo mozzarella and the finest Italian cured meats make up the restaurant's selection of ingredients.
