The mill has its own olive groves, recently expanded with fifteen thousand new trees intended to strengthen production and ensure direct control over the raw material.
Among the varieties processed, Coratina stands out: an Apulian olive with an intense organoleptic profile and a high polyphenol content, pressed on its own for the monocultivar oils.
One production line follows the organic standard, from cultivation through milling, guaranteeing extra virgin oils free of chemical residues and respectful of natural balance.
Beyond oil, the mill prepares traditional Apulian specialities, such as patè of cime di rapa (turnip tops) and of tomatoes, rounding out the production chain.
